This is a seated experience designed to feel personal—like being invited to a private table where every course has a purpose, every wine has a reason, and every guest gets the kind of insider perspective you usually only hear behind the scenes. Selected wines featured for the evening are considered portfolio hidden gems.

Hosted in partnership with Calli Johnson of A Bit of Bailey’s and The Island Store, the evening features James Slusarz as your guide through the portfolio of Foley Family Wines—sharing the details that elevate a great bottle into a memorable moment: what makes it special, why it was chosen, and what you should be tasting when the glass hits the table. James Slusarz is our seasoned wine host from Foley Family Wines, known for his engaging, behind-the-scenes insight and talent for making world-class wines feel approachable, memorable, and fun to learn about.

And of course, the food is not an afterthought. Chef Karl curates the full dinner experience himself, building each course to match the wines in a way that feels intentional, elevated, and just different enough to surprise you—in the best way.

To preserve the intimacy, seating is limited. No crowds. No noise. No rushing. Just an island-night dinner with a rare level of attention and storytelling.
